The Mediterranean Herb Gift Set contains the following six products:
1. Oregano from Taygetus (17g/0.6oz)
On the pristine slopes of the Peloponnese, Daphnis & Chloe's organic farmers spend early mornings in the month of June handpicking this traditional variety of oregano. The bunches are then dried naturally and rubbed by hand, in order to maintain their robust and peppery taste for longer. Oregano is a staple spice of Mediterranean cookery. From Greek salad to Italian pizza you’ll find innumerate recipes where to use it.
2. Smoked Chili Flakes (Bukovo) (50g/1.8oz)
The municipality of Almopia in northern Greece is one of the few areas that produce bukovo, a Balkan variety of red horn peppers named after the Slavic word for “spicy." Daphnis & Chloe’s producer smokes his peppers using birch wood that lasts for weeks. Pleasantly smoky, sweet, mellow and with a lasting flavor, these pepper flakes form an ideal backbone for stews, soups and sauces. They are classically paired with pulses and sprinkled over baked Feta cheese. An ideal companion for avocado, broccoli, cauliflower and fresh coriander, but equally gratifying on a soft-boiled egg.
3. Wild Thyme Flowers (14g/0.5oz)
Thymus capitatus is the thyme variety that populates the rocky coastlines of Greece. If you've ever savored the air on an island during springtime, you will remember the botanical scent of its blossoms. From this type of thyme, bees collect nectar for the most prized Greek honey. Strong, floral, herbaceous and tingling, this thyme is best friends with lemon, garlic and olive oil, a combination capable of taking plain roasted potatoes to another level. Ideal for brining chicken, marinating lamb and pickling vegetables.
4. Bay Leaves (6g/0.21oz)
Selected one by one, Daphnis & Chloe's bay leaves have a sweet aroma with notes of nutmeg – a detail that can only be encountered in the plant’s finest of varieties. The trees grow on a natural plantation by the Ionian Sea, in an idyllic setting just like the one where the god Apollo fell in love with the nymph Daphne. D&C's bay leaves are beautiful for soups, sauces, stews and slow cooking: whatever fits in a large warm pot, loves bay leaves. An essential seasoning for lentils, bay leaves lend a subtle, balsamic taste to legumes. Add a leaf in boiling water to season your pasta or even plain white rice.
5. Fennel Seeds (55g/2oz)
Daphnis & Chloe's fennel seeds come from a young farmer near Pelion, who sells most of his production to distillers of the typical tsipouro/ouzo spirit. These warm, pleasantly fresh fennel seeds have a delicious anice-liquorice aroma that pairs well with both sweet and savory dishes.
If a recipe calls for 1 teaspoon, 1/2 will do the job. Good with fish and seafood, leeks, pork and cakes.
6. Rosemary (14g/0.5oz)
Rosemary is one of these sturdy, universal herbs that often resist well in different parts of the world. Hand-harvested at the peak of their potency on a family farm in the mountains of Epirus, Daphnis & Chloe's rosemary leaves are thick, bold and beautiful with a pleasant piney flavor. Use them to aromatize pork, lamb or chicken. They are delicious with fish and roasted vegetables.
